Minimum 3 years experience in 5* Hotel or Lodge. Tertiary qualification. Buffet & A La Carte experience.
Supervise activities of all kitchen staff, including chefts and speciality chefs
Staff scheduling
Performance management of staff including discipline
Involvement in menu and product reseach and development
Ensuring appropriate health and safety standards
Inventory management
