An upmarket but remote Game Lodge situated in the Okavango Delta in Botswana requires the services of an experienced F & B Manager. The successful candidate will need to be organised with an eye for detail, excellent planning skills, be dedicated to professional excellence, have strong people management skills and be well versed in both food and wine. The ability to operate in a remote location without suppliers in close proximity is a must.
Qualifications and Skills:
o Diploma in Food and Beverage service or tertiary Hospitality Qualification
o Diploma in Fine Wines
o Computer literate
o Sound understanding of stock procedures and experience on stock control systems
o Min experience of 5 years in an upmarket establishment in a Senior F & B Manager Position
o The ability to work independently in a remote location
o The ability to train staff
o A good Understanding of Fair Labour Practices
o The ability to build and maintain a stable team
o Well organized, personable, strong leader
o Good financial acumen
o Sound Labour relations
o Solid Food and Beverage knowledge
o Previous Game Lodge experience would be an advantage
Duties:
o Purchasing of all food and Beverage supplies
o Purchase of capex items and operating equipment
o Management of Employees within department
o Creation and costing of menus & wine/beverage lists
o Manage and control the F&B division in order to achieve or exceed budget profitability
o Maintain a high standard of service, presentation and efficiency
o Control operating equipment
o Stock counts, in order to minimize loss through waste, theft and breakages.
o Ensure all cost reports are correctly and timelessly prepared
o Prepare operating and equipment budgets for the F&B department
o Responsible for the quality of service and maintaining standards with regard to service, equipment and appearance
o Ensure that all rosters, time-books and leave schedules are correctly prepared and controlled
o Maintain effective communication and staff relations within the F&B department
o Ensure and carry out regular staff training in accordance with agreed standards
o To ensure regular stock takes are conducted
o To ensure the prompt and efficient service of all meals, snacks, functions and
