The La Residence Senior Chef de Partie will be responsible for supporting the Executive Chef and Sous Chef in a busy 5* kitchen. To ensure the highest standards and consistent quality and keep up to date with new products, recipes and techniques. You would need to adhere to The Royal Portfolio’s Purpose “To give guests a complete experience and a perfect stay”, and have the potential to learn and grow. 

Main Duties:

  • Adheres to The Royal Portfolio standards of food quality, preparation, recipes, and presentation
  • To ensure that section stock levels are correct and where required requisitioned in accordance with SOP
  • To ensure that Mise en place requirements are planned, actioned and handed over in accordance with SOP
  • Section is set up and managed in accordance with Health and Safety and Statutory Hygiene practices and personally responsible for correct use of equipment and utensils
  • Prepares and properly garnishes all food orders as they are received in accordance with menu specifications, insuring proper plate presentation
  • Prepares sauces, soups and hot entrees
  • Sets up for lunch and dinner by ensuring proper amounts are in place for forecasted covers, special functions and all reservations
  • Checks periodically expiry dates and proper storage of food items
  • Ensures that food from own section is delivered on time
  • Maintains an exact record of preparation, cooking and presentation specifications of all dishes produced in the section in a file which is kept at the section at all times for reference
  • Confers closely with the Sous Chef and takes every opportunity to become familiar with all aspects of his or her position, in order to be ready to fill in whenever required
  • Co-ordinates job tasks with staff in own section
  • Responsible to supervise junior and Commi chefs
  • Adaptable and able to assist in all sections 

Requirements & Qualifications for this position:

  • Minimum 4+ Years’ Experience in a Upmarket Restaurant / 5* Hotel
  • Formal Training / Diploma in Food Preparation and Culinary Arts
  • The ability to train and develop junior members of staff
  • The ability to run a section effectively and efficiently
  • Good English communication skills
  • Able to work flexible hours, weekends and holidays
