- 4-5 years all round kitchen experience in a 4-5 star estabilishment with the following
- Cold Kitchen
- Pastry Knowledge
- Portion Control imperative
- Presentation skills essential
- ensure/prepare that all mise-en-place is always freshly prepared and on time.
- ensure/prepare that all dishes are being prepared to the correct recipe and to the correct quantity.
- ensure that all dishes reach the hot plate or passe correctly garnished, the correct portion and size, presented on the prescribed serving dish in the prescribed manner.
- ensure that his section is being kept clean and tidy at all times.
- ensure that chefs and trainees receive the right training and optimum guidance.
- ensure that any anticipated shortages are communicated promptly to the head chef.
- ensure that all staff under control are treated fairly and with courtesy
- ensure that all stocks are kept under optimum conditions.
