Job Summary:

Ensure a consistently high standard of food preparation and service.

Adhere to the presentation levels set by the Head Chef

Adhere to cleaning schedules


Duties / Responsibilities:

  • Prepare food to the presentation levels set by the Head Chef
  • Comply with portion control put in place by Head Chef
  • When delegated responsibility by the Head Chef prepare orders for all suppliers using the Purchase Order system
  • When delegated responsibility by the Head Chef prepare end of month stock take reports in an accurate and timely manner
  • Ensure waste sheets are accurately recorded
  • Assist Head Chef in ensuring that all front of house staff are familiar with all the menus on offer in the different outlets
  • Adhere to the cleaning schedules in compliance with H.S.E. guidelines
  • Have full awareness of F&B reservations
  • Know what action to take when an emergency call is required
  • Be fully aware of and adhere to health & safety, fire and bomb threat procedures



    1. +3 years of experience as a Sous Chef

    2.  Understanding of various cooking methods, ingredients, equipment and procedures

    3.  Excellent record of kitchen and staff management

    4.  Accuracy and speed in handling emergency situations and providing solutions

    5.  Familiar with industry’s best practices

    6.  Working knowledge of various computer software programs (MS Office, restaurant management software, POS)

    7.  BS degree in Culinary science or related certificate would be a plus
