Location: Cape Town

High end bar within a 5* hotel wishes to appoint a Manager to fulfill the following responsibilities:

  • To continually develop the reputation of outlet to maintain its position as the premium bar in Cape Town
  • To develop the experience offered by bar to ensure that both hotel residents and locals are well catered for, with the priority being on hotel residents
  • To maintain and improve the standard of service in the outlet and the pool terrace, ensuring an efficient, cost effective, profitable operation

Duties and responsibilities:

- To work with the Sales and Marketing Department in the branding and promotion of the outlet

- The management of the entire operation of the bar and the pool terrace and all events with which it is associated

- To set objectives for the team and to galvanize the team to working towards these objectives

- To operate, promote and manage the members club including:

o The necessary administration, including membership and accounting
o Finding new members
o Organizing monthly tastings / events
o Managing club list and sales
o Networking with members, on and off-site
o Newsletter (with F&B sales and marketing executive)
o Working with the Sommelier (wine) on the management of the cellar
- To ensure effective recruitment and staffing levels at all times, working closely with the HR manager and the Deputy General manager
- To manage the outsourced staffing company keeping staff levels accurate
- To ensure that all staff and management receive the necessary training and to work with the Training manager on the scheduling thereof
- To liaise with the Executive Chef and Sommelier on new menus
- To ensure cleanliness of the bar, terrace and pool deck (including back of house areas) at all times, including collateral
- To assist in bar training throughout the hotel
- To assist procurement and the Sommelier in sourcing new products at the best prices
- To manage the beverage control function in the outlet: pricing, stock taking, variance analysis, wastage, ullages etc.
- To assist in the management of beverage control in other areas of F&B if required
- To manage the Micros/Fidelio point of sale system in the outlet
- To ensure the efficient service of food and beverage in the bar and pool deck/terrace

Requirements:

  • Matric with a Hotel Management Qualification
  • Previous experience in a 5* hotel or high end restaurant and bar in a Beverage / Bar managerial position
  • Well groomed with excellent communication skills in English (written and verbal)
  • Strong leadership skills
  • Attention to detail
  • Ability to work shifts
