  • Proactive in the maximising of sales and generation of revenue
  • Effective management of operational requirements during service periods
  • Contribute towards the setting of departmental targets and objectives and take positive action to achieve them
  • A clear understanding and knowledge of all menu items including ingredients, allergens and presentation
  • Maintain hygiene standards, ensuring cleanliness throughout the Restaurant
  • Assist with ensuring that the department complies with all statutory, legal and health and safety requirements
  • Accurate completion of cash-ups and consistent follow up on variances and anomalies
  • Support the Restaurant Manager in the implementation and following of stock control procedures
  • Monitor OE stock levels and breakages
  • Mise-en-place is prepared according to Restaurant standards
  • Ensure wastage and breakages are kept to a minimum

  • Excellent knowledge of food safety, storage, health standards
